Sous Chef, Seasonal - Marathon Project ($25/hr+ DOE - Kenai, AK)
**Job Description** This Seasonal Sous Chef supports and supervises daily food production within a 20-foot mobile food trailer serving Marathon Refinery personnel and workers. This position leads shift execution, ensure food safety compliance, manages inventory and ordering, and supports high-volume service in a compact, fast-paced, environment. _This is a seasonal position working in Kenai, AK at the Marathon Refinery. Project duration is March 1 – May 5, 2026, plus a couple days for shut down. Preference given to candidates living in the Kenai/Soldotna/Nikiski areas. Preference is also given to those candidates with a working knowledge of food truck/trailer handling and operations. NMS housing provided for candidates living outside the preferred hiring area. Smoking is prohibited on Marathon Refinery and NMS provided housing._ **Responsibilities** + Prepares and cooks a variety of foods. + Smokes proteins for a duration of up to 12 hours. + Follows and instructs Cook ll’s on menu and recipes to ensure consistency of food produced and served. + Make sure Chef’s specials are advertised and executed. + Observes and instructs others on the proper rotation (FIFO) procedures to be followed for all food related items. + Reviews the needs of the day with assigned supervisor(s), completes production sheets, verifies supply needs and availability. + Responsible for quantity and quality control in food production as well as overall sanitation of assigned areas. + Follows all Food Safety Standards (HACCP). + Supervise and support Cook II staff. + Execute smoked meat production (pork, chicken, brisket). + Oversee food prep, cooking, and quality control. + Monitor HACCP standards and temperature logs. + Manage inventory, ordering, and supply runs (3–5 times/week as needed). + Weekly inventory of trailer supplies as well as offsite supplies. + Handle deposits and cash reconciliation. + Operate Clover POS and oversee transaction accuracy. + Monitor propane levels and potable water systems. + Maintain sanitation in trailer and service area. + Part of 24-hour service coverage during final project phase. + Trains food service personnel. + This position is responsible for the supervision of staff. + Other duties that are pertinent to the department or unit’s success also may be assigned. **Qualifications** + Must have High School diploma or GED equivalent. + Must have, at least, five (5) years of documented experience operating as a Sous Chef with supervisory responsibilities. + Must have knowledge and training in using a variety of food production equipment. + Must have Alaska Food Handlers Card or ServSafe certification contingent upon 30 days of hire. + Contract requires employees to speak, understand, read and write English. + A valid driver's license and an acceptable driving record for the past three (3) years to be eligible under the NMS vehicle insurance policy. **Preferred Qualifications** + ServSafe Certified Manager certification. + Two (2) years of food truck and/or mobile food trailer cooking experience. + Restaurant or hotel culinary experience with supervisory responsibilities. + Smoker wood fired heat management and cooking. **Working Conditions and Physical Requirements** Weather: Indoors in a controlled environment; requires most work to be done inside and outside. Noise level: Moderate to Loud. Description of environment: This is a mobile food trailer located on the premises of an oil refinery parking lot. Physical requirements: Employee is required to lift and/or move up to 50 lbs. Frequently required to sit, stand, walk, use hands/fingers to handle or feel, climb, stoop, kneel, crouch or crawl, talk/hear, see, taste/smell, and carry weight/lift.
