The Role at a glance:

We are looking to add an experienced, motivated production manager to our Constellation Culinary group team in Hamilton, NJ. As an production Manager, you will have the opportunity to supervise the food production process including purchasing, food specifications, meal preparation, service and sanitation.

Position Summary

The Production Manager is responsible for overseeing all culinary production across Rat’s Restaurant’s retail outlets and off-premises corporate food drop-offs. This role ensures that food is produced efficiently, safely, and consistently across multiple kitchens and service channels.

This is an operations-focused leadership role responsible for systems, production flow, food cost control, execution standards, and team accountability. The Production Kitchen Manager works closely with chefs, café managers, and operations leadership to ensure all food leaving our kitchens meets CCG/Rat’s quality, safety, and brand standards.

What you'll be doing:

Key Responsibilities

Production & Execution

Oversee all food production for: Rat’s Restaurant retail operations Café (Gazebo, Van Gogh, Peacock) outlets Off-premises corporate lunch and catering programs (to be started with this role in place) Build and manage daily, weekly, production-based schedules Ensure recipes, yields, portioning, and plating standards are consistently followed Coordinate prep, batch cooking, and delivery timelines across all outlets

Food Cost & Inventory Control

Manage food cost, waste, and yield across all production channels Oversee ordering, receiving, storage, and inventory rotation Ensure proper labeling, dating, and storage compliance Monitor product usage to prevent shortages and overproduction

Quality & Food Safety

Maintain strict compliance with food safety, sanitation, and HACCP standards across all retail outlets Ensure all production kitchens meet health department/ECOSure audit standards Conduct routine kitchen and storage inspections Train teams on food handling, labeling, allergens, and temperature controls

Team Leadership

Supervise and develop production cooks, prep teams, and kitchen leads Set clear expectations for accuracy, cleanliness, and productivity Provide hands-on coaching, feedback, and performance management Support staffing plans to ensure production needs are covered efficiently

Corporate Production

Oversee execution of all off-premises lunch drop-offs and corporate production Ensure orders are produced accurately, packed correctly, and delivered on time Coordinate production timing with operations and logistics teams

Systems & Process Improvement

Develop and refine prep lists, pars, production logs, and inventory systems Identify opportunities to improve speed, consistency, and cost efficiency Serve as the central point of accountability for culinary execution across all retail outlets What we're looking for:

Must-haves:

3+ years’ progressive culinary management experience preferably within a long term care setting. Ability to organize workloads and meet time deadlines. Strong interpersonal, communication and leadership skills. Proficiency in Microsoft software programs.

 

Nice-to-haves:

Associate degree in culinary arts preferred. Compensation Range

$75,000- $85,000
