The Food & Drinks Manager is responsible for operational oversight and day to day running of all Food & Drink outlets & Conference & Events to deliver an excellent guest and team member experience while maximising revenue, optimising costs, and supporting Team Member engagement and development. The role ensures all Food & Drink areas operate in accordance with Hilton brand standards, health and safety regulations, and financial targets.
This position reports directly to the Director of Food & Drinks and plays a key leadership role within a large, complex resort environment.
What Will I Be Doing?
As a Food & Drinks Manager, you will be responsible for performing the following tasks to the highest standards:
Manage the day-to-day operations of all Food & Drink outlets, bars, lounges, and banquet functions
Ensure compliance with Hilton brand standards, SOPs, and service excellence initiatives
Deliver exceptional guest and team member experiences through visible leadership and proactive service recovery
Drive revenue through upselling initiatives, menu engineering, promotional activities, and effective pricing strategies
Monitor and control departmental costs, including labour, food, drinks, and operating expenses
Analyse financial and operational reports to identify trends, risks, and improvement opportunities
Lead, coach, and develop Food & Drink management and supervisory teams
Support recruitment, onboarding, training, and performance management processes
Maintain effective communication with all stakeholders and departments
Ensure full compliance with health, safety, hygiene, and food safety regulations
Act as a strategic partner to the Director of Food & Drinks, contributing to departmental planning and innovation

Previous experience in a Food & Drinks leadership role within a hotel or resort environment

Strong organisational and time management abilities
Ability to work under pressure and manage multiple priorities
A passion for delivering exceptional Guest and Member experiences
Preferred Qualifications
Experience within a Multi-outlet or large resort Food & Drink experience
Formal hospitality or business qualification
Strong knowledge of premium service standards and guest engagement strategies
Knowledge of Malta hospitality industry would be an advantage
